Homemade Marinara Sauce, How To Make Red Pasta Sauce


          Today's dish is going to be the simple and delicious Marinara Sauce or Red Pasta Sauce. Though they are readily available in the market, nothing can beat the freshness and the flavor in the homemade version. Some good quality tomatoes and Italian herbs is all that you need to make it, and the sauce is very versatile too, in the sense you can use it with pasta, on a pizza, make a sandwich along with some cheese slices and it tastes absolutely delicious..

Need To Have

  • Ripe Tomatoes - 5
  • Garlic - 3 cloves, chopped
  • Chopped Basil - 2 to 3 tablespoons
  • Red Chilly Flakes - 1/2 teaspoon
  • Dried Basil - 1/4 teaspoon
  • Salt to taste and some Olive Oil

Method


          Make a cross with a knife on the bottom of the tomatoes and cook them in water, till the skin starts splitting. Remove and let them to cool, then peel the skin, crush the tomatoes well and keep.


          Heat some extra virgin olive oil, add the chopped garlic, saute for a minute, the garlic should not change color. Then add the crushed tomatoes, chopped basil, chilly flakes and salt and about 1/4 cup of water. Cook it on medium low heat till it thickens a bit and the raw smell of tomatoes is gone. Now add the dry basil and a teaspoon of olive oil, mix and remove.

Note
Since I made a small quantity, I needed to add the water, if you are making a larger quantity, then you can leave out the water, the juice from the tomatoes should be more than enough.
I have made a thick sauce, that way I can use it on bread, pizza and when mixing with pasta, I can use the cooked pasta water to thin it out, so the consistency of the sauce is totally your preference.
Since I have just crushed the tomatoes, the sauce will have chunks of tomatoes here and there, if you want a smoother sauce, blend the peeled tomatoes and make the sauce.
