Methi Chaman, Fenugreek Leaves With Paneer


          My daughter's favorite side dish for rotis is Palak Paneer and I have two versions of it on the blog. Recently I came across this dish, Methi Chaman and gave it a try, we can call the dish, a cousin to Palak Paneer. We grind and cook a mixture of fresh methi/ fenugreek leaves and spinach and add paneer at the end. This dish looks similar to Palak Paneer, but the methi gives a wonderful flavor and taste to the dish and it goes very well with rotis, naan and pilafs..

Methi & Carrot Chutney, Fenugreek Leaves & Carrot Chutney, Vendiya Keerai Carrot Thogayal


          I get three types of organic greens, spinach, methi and amaranth every week and sometimes the methi leaves bunch turns out to be a really big one. After making the usual stuff with them, I had some more and I was looking out for something new to try with it. I looked up for some chutney recipes with fenugreek leaves and finally decided to make this one with methi/vendiya keerai and carrots. This chutney has a coarse texture and tastes best when mixed with some rice and ghee. This is the first time I made this and we loved it, it goes well with some curd rice too..

Aloo Paneer Tikkis, Potato Cottage Cheese Patties


          I had some paneer left after doing the usual Palak Paneer, it was a small quantity and not enough to make a dish with it alone, so I decided to add some potatoes with it and make these Aloo Paneer Tikkis, Potato Cottage Cheese Patties. I have also added some fresh methi ( fenugreek ) leaves to add some flavor to the tikkis. Tikkis can either be deep fried or shallow fried, I have shallow fried these tikkis. They turned out super delicious, crispy on the outside and soft on the inside, and tasted great with coriander chutney, you can also serve them with some tomato sauce too..

Methi Muthiya, Wheat Flour & Fenugreek Leaves Dumplings


          Every week I get a bunch of fresh methi ( fenugreek leaves, vendaya keerai ) bunch and sometimes the bunch turns out to be slightly bigger. After having used half of a big bunch for sambar or kootu, I was left with a little more leaves, which I decided to use for making these Methi Muthiya. This is again another healthy and filling Gujarati snack, I have already posted Khandvi and Dhokla and now these Methi Muthiyas join the healthy snack list. As the name suggests, we use methi leaves along with whole wheat flour and besan flour to make them and there are two ways of making them, deep fried version and the steamed version. Today's post is the steamed Methi Muthiyas, and they can be eaten as such or with some spicy chutney or sauce..

Methi Moong Dal Sabzi, Fenugreek Leaves With Lentils


          Every week, I get a bunch of fresh organic methi, and I was browsing the web for a new dish that I can try out with it, when I came across this Methi Moong Dal Sabzi, fresh fenugreek leaves cooked with moong dal. The recipe is a simple stir fry and in fact I didn't expect it to taste this good, it goes very well with rotis but you can serve it as a part of a South Indian meal too..

Moong Dal And Fenugreek Leaves (Methi,Vendaya Keerai) Paniyarams


          When I get tired of making the same idlis and dosas, I like to make these paniyarams, most of the time, I'll use the same idli/dosa batter for making it, but sometimes I make a different and separate batter. When I saw this Moong Dal Paniyarams, I wanted to give it a try. The batter is made with split moong dal/payatham paruppu ( with skin ) and to make it more flavorful and nutritious, I have also added some sauteed methi leaves. The paniyarams came out soft and fluffy, you can serve it as a snack, for breakfast or dinner and it goes very well with a spicy chutney..

Cauliflower With Fenugreek Leaves, Methi Gobi


          I get organic greens 3 days a week, and it's methi/fenugreek leaves one day, so every week I have to cook something with it, sometimes I make sambar, kootu or parathas and then I try to make curries with it along with other vegetables. As much as I like Aloo Methi, now I have started making this Methi Gobi and I like it even better, and we get a good serving of vegetables. It's a simple curry, cleaning the fresh fenugreek leaves and preparing the cauliflower takes the most time, otherwise the curry gets done fast. This goes well with phulkas and rotis or even as a side with some rice and dal/sambar..

Vendhaya Keerai Paruppu Usili, Fenugreek Leaves (Methi) With Lentils


          Paruppu Usili is one of my favorite side dishes, especially with moru kuzhambu, we can make it with many vegetables, the common ones being green beans and cluster beans ( kothavarangai ). I have tried it with other vegetables too, but this is the first time I made it with methi/fresh fenugreek leaves. Since fenugreek leaves have a bitter taste, I also added some green peas and jaggery in the usili and it turned out really good and tasted perfect with rice and Moru Kuzhambu..

Methi And Carrot Parathas (Flat Bread)


          Parathas are flat breads with some kind of filling inside, it can be a dal (lentil) or a vegetable filling or a mixture of both. When served with some relish or curry on the side, it sums up to a nice wholesome meal.
For today's parathas I chose fresh fenugreek leaves (methi) and carrots, the slight bitterness of the methi is offset by the sweetness in the carrots. These parathas were extremely soft and delicious with the nice aroma from the ajwain seeds (bishop's weed) in the filling..

Methi Masoor Briyani (Fenugreek Leaves & Split Orange Lentils Rice)


          Briyanis are very popular in India, it is basically rice cooked with very aromatic spices and vegetables and traditionally cooked in a lot of ghee, but I have kept away from the ghee and used just oil. You can make a variety of briyanis by changing the combination of vegetables or by adding different beans or lentils. I have already given a recipe for the Spinach And Kidney Beans Briyani, today it is a very flavorful briyani with masoor dal (split orange lentils) and fresh methi leaves (Fenugreek Leaves). Both of them lend a distinctive flavor to this briyani, again an one pot meal..

Cauliflower And Methi Paratha

 
          I try to make parathas at least once in two weeks, an ideal weekend lunch or brunch. As the parathas  have some kind of vegetable stuffed with, I usually serve it with some pickle, curd and a salad on the side. I've never tried anything other than aloo parthas or radish parathas, this is my first attempt to make these cauliflower parathas, the thought of grating the cauliflower so finely had put me off, but my new food processor made the job easier. I added methi for the extra flavor, and for a first try they turned out to be too good..
