When I was checking on the web for some spinach paneer kofta recipe, I came across this dish Shaam Savera by chef Sanjeev Kapoor. I have never heard of this dish before, or might have seen on some menu card and totally forgot about it. More than the actual recipe, the pictures of this dish on the web actually made it look very tempting and I wanted to give it a try. When I saw that, the dish is basically spinach koftas stuffed with paneer and served with a rich tomato gravy, I knew immediately, that nothing can go wrong in this combination. It's not an everyday kind of dish, needs some time, so make and enjoy it with rotis, naans or pilafs, for a relaxed brunch or a special dinner..

Paneer Capsicum Masala ( No Onion And Garlic )
When browsing the web for something new to try out with paneer, I bumped into this dish, made it, clicked it and jotted down the recipe along with the changes that I had done to it, but forgot the name of the dish. Today, I spent nearly an hour, trying to trace out the recipe source, I think I got from Tarla Dalal's page, but I couldn't find it, so I named the dish ( going by the ingredients ) as Paneer Capsicum Masala. This is such a rich and delicious gravy, creamy from the tomato and cashew paste and has a wonderful flavor from all the spices added to it. Do try it out, an excellent side for rotis and naans..

Paneer Kofta Curry
This is the first time I am making Paneer Koftas at home, I have made cabbage koftas and lauki koftas ( I have not blogged them yet, will do it soon ), but never this. I think it's because, whenever I bought paneer, Palak Paneer ( my daughter's favorite ) was the first thing that I made with it and then the Paneer Butter Masala. Also, since koftas need a little more work, time and deep frying, I always find an excuse to avoid it. But this time, I had decided to make the koftas and I realized that actually it's not really too much work. I had checked a couple of recipes from my cookbooks and online and this is a combination of couple of them. The koftas turned out really soft and the curry turned out absolutely delicious, a good side dish to go with naans, pilafs and rotis..

Paneer Shahi Kurma, Creamy Curry With Cottage Cheese
Though the first choice in my house, when I make paneer is Palak Paneer, there are a couple of dishes that I want to try out with it, Paneer Shahi Kurma being one among them. After looking at a couple of recipes. I settled down with this one from here, of course with a few small changes. This is a creamy and rich curry, but I have not added any cream or butter here, the curry gets its richness from the nuts added. It goes very well with rotis, nans and pilafs, ideal for parties or for those special weekend lunch or dinner..

Paneer Lababdar
Back after a small break, didn't mean to take it, but had a houseful of guests for a week, then caught a very bad cold, so I just had to do it. Coming to today's post Paneer Lababdar, I was a little tired of making the same dishes with paneer, I wanted to try out something new with it and I saw this cooking video of Chef Vikas Khanna, it was a healthy version of Paneer Lababdar sans the butter and cream. It's a simple dish, takes less than thirty minutes to make.and though the it didn't have any butter or cream, it still tasted very creamy and delicious and went very well with rotis..

Eggplant And Paneer Curry
I make paneer at home, at least once in 2 weeks, since my daughter likes it very much and mostly instead of doing a curry with paneer alone, I cook it along with some vegetable. I usually add capsicum, peas, spinach or even cabbage, this time I wanted to try it with eggplant/brinjal. Sauteing the eggplant and then mixing in paneer pieces would have worked too, but I made a curry with grilled and mashed eggplant and paneer. At home, we like the smoky flavor from the grilled eggplant, if you don't like it then peel, cook and mash the eggplant. The curry was delicious with a nice flavor, we had it with rotis but it would go very well with naans or even with some light pilaf..

Rice And Paneer Cutlets
Today's post is once again for the ' Shhhhh Cooking Secretly ' event, I was supposed to cook and post it for last month, but then, since my kitchen was getting renovated, I couldn't do it till last week. I was paired with Shama of Easy2Cook Recipes and she had given me rice and paneer as the secret ingredients. I didn't think too much, the moment the ingredients were given, the first thing that came to my mind was these cutlets. I used leftover rice, paneer along with some capsicum and onion and spices and then shaped them into these cutlets. Since I wanted to keep it healthy, I shallow fried them, they turned out super delicious, it can be served with some green coriander chutney, but I served them with just some tomato sauce, perfect evening snack..

Chilly Paneer ( Cottage Cheese )
Chilly Paneer, it's a nice side dish to go with fried rice and noodles, an Indo-Chinese dish, Indian paneer ( cottage cheese ) cooked in Chinese style. It's a very easy dish, the paneer is shallow fried and added to sauteed bell peppers, spiced up with chilly and soy sauces and flavored with ginger, garlic and spring onions. Palak Paneer - 2, Spinach With Indian Cottage Cheese
Though I am calling this post as Palak Paneer - 2, this is in fact, the first palak paneer that I used to do for my daughter. It's a very simple dish that does not use much spices or masalas. Back in the US, we get baby spinach packets, just wash and blanch them and use them and they taste very good in this dish, better than the regular spinach. This dish is ideal for a small group, because we are using only spinach puree here, no onions or tomatoes to give more volume, for a bigger group or party, I would recommend my other recipe here. Palak Paneer Bhurji/ Spinach And Cottage Cheese
My daughter loves spinach and paneer, she likes all the curries I make with them, especially the Palak Paneer, it's her favorite side dish for rotis. But sometimes when I want to do something simple with spinach and paneer, but still very tasty, then this Palak Paneer Bhurji is my option. Moong Dal / Green Gram And Paneer Curry
Ever since I started using this moong dal /green gram with skin, I have become a huge fan of it, it's not only more healthy ( extra fiber from the skin) but also very tasty. I had used it in the cabbage pongal and now in this curry along with homemade paneer/ cottage cheese. Adding paneer made this dish even more tasty and I also added some capsicum and kasuri methi for some extra flavor. We had it with pav / buns, you can even have it with some plain toast too..

Chocolate Sandesh
Today is a special day at Aromatic Cooking, it was this day one year back.., yeah you guessed it right, it's the 1st Blog Anniversary. I can't believe it's been so long, it was an unplanned beginning, but an enjoyable journey. At this point, I can't thank enough my blogger friends for their encouraging comments and not forget to mention their wonderful blogs from where I get the inspiration to keep going. I should also thank my family, especially my husband and daughter for putting up with my delicious (sometimes disastrous) experiments. I know I have to work still harder to make the blog even more appealing but I'll be also equally enjoying doing it. So today, to celebrate this big day, I have made some Chocolate Sandesh. It turned out really good, my daughter who's not a big fan of Indian sweets, liked this because I had made it a chocolate one. If you like milk sweets and like chocolate, then do give this a try..

Keerai Paneer Parathas/Spinach Cottage Cheese Flatbreads
I had got this bunch of arai keerai, a type of greens like spinach and mustard greens. I had wanted to do the Keerai Masial and rice, but my daughter didn't want to have rice that day. I had to use the spinach the same day and I had some paneer in the freezer, so put the the two together and made these Keerai/Spinach Paneer Parathas. Palak Paneer/Mashed Spinach With Indian Cottage Cheese
Whenever I make a batch of paneer at home, the first dish I do with it is this Palak Paneer, mashed spinach gravy with Indian Cottage Cheese, this being my daughter's most favorite dish. I had made it so many times, but something or the other went wrong, nothing wrong with the dish or its taste, but with the pictures. This time, I think the pictures turned out better, so I thought I'll go ahead and do the posting. There are couple of versions that I do, this is one of them with some freshly ground masala. This is a version that I make when I have to make it for a group, the added masala increases the quantity of the dish, it's a very tasty side dish to rotis and naans..

Cabbage & Paneer (Indian Cottage Cheese) Curry
Usually when I make paneer dishes at home, it's mostly palak paneer ( spinach with Indian cottage cheese). This time I didn't have spinach in hand and so I tried this Cabbage & Paneer stir fry, I used homemade paneer but the store bought one also tastes good, I also added some capsicum and kasoori methi ( dried fenugreek leaves) to add a little more flavor to the dish. Homemade Paneer
Though I have made over 150 posts, there is not a single post about a basic recipe like our sambar and masala powders or making a good idli batter, so today I thought I'll make some posts in between other dishes about them.
