Broccoli And Sun Dried Tomato Pasta


          It's been a long time since I posted a pasta recipe on the blog, might be it's been a long time that I have cooked pasta or did the same usual stuff. This time, I had broccoli and sun dried tomatoes with me and I wanted to try out something different, and after searching the web, finally I decided to do this Broccoli And Sun Dried Tomato Pasta. It's basically a simple recipe and it has the usual basic ingredients that we add in a pasta dish, but the way it's added made a difference, the pasta had such a delicious flavor and it tasted really good..

Need To Have

  • Penne Pasta - 2 cups
  • Broccoli - 1 medium head
  • Sun Dried Tomatoes In Oil - drained & chopped, 1/4 cup + 1 tablespoon
  • Garlic - 10 small cloves
  • Red Chilly Flakes - 1/2 teaspoon
  • Lemon Juice - From 1/2 a small lemon
  • Parmesan Cheese Powder - 3 - 4 tablespoons

Method


          Cook the pasta according to the directions on the box, drain and keep, reserve a little of the pasta water. Heat 2 tablespoons of olive oil, add the garlic and the chilly flakes and saute on low heat, we are infusing the oil with the garlic and chilly flavor, but don't let the garlic to brown. Remove the oil and keep.


          In the meantime, chop the broccoli, came to about 3 cups, put it in boiling water ( with salt ) for 2 to 3 minutes, drain and keep. Heat a tablespoon of olive oil, add the broccoli and saute for 5 to 7 minutes, till brown spots start appearing here and there. Add the sun dried tomatoes, 1/3 cup of the pasta water, cover and cook till the water goes away, then switch off.


          Add the pasta, lemon juice and mix, then add the garlic and chilly oil and mix. Finally add the cheese, mix, check for salt and serve.


Note
If at the end, the pasta is very dry, then add a little pasta water, the olive oil infused with garlic and chilly flakes gives the flavor to this pasta, so do it this way.
The pasta tastes good warm or you can have it cold like a salad.
