Besan Cheela, Gram Flour Pancakes

Most of the days, our breakfast is either dosa, bread or idlis except during the weekends when I try to make something different. I had tried Besan Chila a couple of times before but never got a chance to post it on the blog, this is not an elaborate recipe, we can make it during weekdays too if you have everything ready. The main ingredient here is the besan flour/gram flour, it's the binding base and the other ingredients are all for taste and texture. I have added some chopped onion, spinach along with the spices, but you can use grated carrots, shredded cabbage and even tomatoes. They look like egg omelettes, taste very good and make a very filling breakfast..

Need To Have

  • Besan Flour/Gram Flour - 1 cup
  • Wheat Flour - 1/4 cup
  • Ajwain Seeds/Omam - 1 teaspoon
  • Red Chilly Powder - 1 teaspoon
  • Coriander Powder - 1 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Chopped Onion - 1/2 cup
  • Chopped Spinach - 1/2 cup, packed
  • Salt - 1 teaspoon
  • Water - 1 cup + 6 tablespoons

Method

Take the flours, add the ajwain seeds, salt, turmeric, chilly and coriander powders and salt, then adding the water little by little, make a lump free smooth mixture. Then add the chopped spinach and onions.

Mix everything together into a thin pancake like mixture. Grease a pan, pour a ladle of batter, spread it gently, drizzling some oil, cook it till it starts turning golden brown, Flip it and cook on the other side, remove and serve it warm with tomato pickle or sauce.

Note
If you want to make it gluten free, just avoid the wheat flour and make it.
There are so many ways of making these cheelas, add your favorite vegetables and make them.
The water given above will be correct for these vegetables, but if you are adding a watery vegetable like tomatoes or cucumber, then adjust accordingly.
If you don't like the flavor of ajwain, then add cumin or even garam masala.
