Bottle Gourd/Lauki/Sorakkai is such a versatile vegetable, we can make so many dishes with this vegetable, starting from curries, koftas, idli, dosa, roti and halwa and I buy it almost every week. Today's dish, Lauki Akki Roti is such an easy dish and the main ingredients are rice flour and bottle gourd. I have given an easy method of making this roti, and they come out really soft, serve them with a spicy chutney for a filling and delicious meal..
Need To Have
- Bottle Gourd - 1 medium size
- Rice Flour/Akki - 2 cups
- Grated Coconut - 1/4 cup
- Chopped Coriander - 1/4 cup
- Green Chillies - 2. chopped finely
- Salt to taste
I saw this method of making the roti here.
Method
Peel and grated the bottle gourd, got around 2 cups. Add some salt to it and leave it for 30 minutes. After 30 minutes, add the rice flour, grated coconut, green chillies and chopped coriander, and adding some water make a thick batter ( like we do for adais or pancakes ).
Heat a pan, grease it, reduce the flame or remove the pan from flame, add a ladle of batter, using your hand, spread out the batter ( dip your hand in water in between ) as thin as possible.
Drizzle some oil, cover and cook till the bottom turns golden, then flip and cook the other side and remove.
Note
We leave the grated bottle gourd and salt for 30 minutes, so that the moisture from the vegetable is released and depending on that we can add more water for making the batter.
It's easy to spread the roti on the pan, your hand will not touch the pan directly, only the batter, so it's not hot.
Serve it with a spicy coconut chutney, we had it with the garlic chutney.
