Vada Pav


          Finally, today I am posting Vada Pav. Vada Pav is a popular street food of Maharashtra ( a state in India ). It's actually pav ( bread ) served with fried potato vadas in between along with a couple of chutneys and fried chillies. There are so many versions of the vada pav, and today I am posting my favorite one, the classic style. I have already posted the recipes for the green chutney, sweet chutney and dry garlic chutney in the blog, once we have the chutneys ready, it's just making the vadas and then putting them inside the bread along with the chutneys. It's a perfect snack for those cold evenings or I can call it even dinner since it's very filling too..

Need To Have
For The Vadas

  • Potatoes - 5 small
  • Mustard Seeds - 1/2 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Curry Leaves - 10
  • Green Chillies - 2 chopped
  • Chopped Coriander - 1/4 cup
  • Asafoetida - 1/4 teaspoon
  • Coriander Powder - 1 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Chat Masala - 1/2 teaspoon
  • Salt to taste

For The Batter

  • Besan/Gram Flour - 1 cup
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Baking Soda - 1/2 teaspoon
  • Salt to taste

Method


          Let's make the vadas first. Boil, peel and mash the potatoes. Heat some oil, add the mustard seeds and cumin seeds, when it starts sputteriing, add the asafoetida followed by the curry leaves, mix and add it to the mashed potatoes. Then add the coriander powder, turmeric powder, garam masala, chat masala, chopped green chillies, chopped coriander and salt. Mix everything together, shape into balls and keep ( made 8 balls ).


          To make the batter for dipping the potato balls, take the besan flour, add the turmeric powder, chilly powder, salt and baking soda and adding some water, make a thick batter and keep.


          Heat some oil for deep frying, take the potato balls, flatten it a little, dip in the batter and drop them carefully in the hot oil. Deep fry them till golden, remove and drain. For the fried green chillies to be served with the vada pav, slit the green chillies slightly, it should still be whole, saute them in some oil, along with some salt, till they brown a little here and there.Now to put together the Vada Pav, take the pav ( bun ), slice it, apply the sweet chutney on one side, the green chutney on the other, crush the potato vada a little,place it in between, top it with the dry garlic chutney, close it and enjoy along with fried green chillies ( you take a small bite of it in between ).


Note
You can heat more oil and deep fry more than one vada at a time.
You can deep fry the green chillies, but I shallow fried them, sorry I missed taking the picture.
