Zucchini is another favorite vegetable at home, whenever I happen to see them fresh, I always pick them up. I usually add them to pasta or make a chutney, this time I had just one zucchini and I wanted to make a curry to go with rotis, since a curry with only one zucchini would be very less, I combined it with some green peas, green beans and potato along with a coconut and coriander paste. The curry turned out very delicious and tasted really good with the rotis, and I am sure that it would taste good with rice too..
Need To Have
- Zucchini - 1 big, diced
- French Green Beans - 1" pieces, about 1 cup
- Potato - 1 small, diced
- Fresh Green Peas - 1/2 cup
- Mint Leaves - 1/4 cup
- Black Pepper Powder - 1/4 teaspoon
- Lime Juice - from 1/2 a lime
- Salt to taste
To Grind
- Coriander Seeds - 1 tablespoon
- Cumin Seeds - 1/2 teaspoon
- Chopped Coriander Leaves - 1/2 cup
- Grated Coconut - 2 tablespoons
- Small Onions - 3, chopped
- Garlic - 3 cloves
- Green Chillies - 2
- Ginger - 1" piece
Method
Grind together everything given under ' to grind ' into a smooth paste.
Heat some oil, add the ground paste and saute till the raw smell goes away, then add the zucchini, beans, peas and potato.
Mix for a minute, then add some salt, about a cup of water, cover and cook till the vegetables are done. Then add the lime juice, mint leaves ( torn into pieces ) and the pepper powder, mix, remove and serve warm with either rice or rotis.
Note
When serving with rice, keep some lime wedges on the side, squeeze it when mixing the curry with the rice.
Don't leave out the mint and lime juice, it gives a nice flavor to the curry, also you can add some coconut milk, in place of the grated coconut, just make a paste with the rest of the ingredients and add the coconut milk at the end.
