Kadmbuttu/ Steamed Rice Balls, this is a Coorg dish ( Kodava Cuisine ), I had eaten this only once, during our trip to Coorg, we had stayed in a Coffee estate, the cook had made this dish for us. Traditionally Kadmbuttu is served with a pork curry, we are vegetarians, so the cook had served this with Kadala Curry. We loved it, I asked the cook for the recipe, and couple of weeks back, I had made this at home along with the kadala curry. This is a very simple dish, made with idli rava ( idli rava is widely used in Kodava Cuisine ), these steamed rice balls are very soft and goes very well with the kadala curry or any kurma..
Need To Have
- Idli Rava ( Coarse Rice Powder ) - 2 cups
- Grated Coconut - 1 tablespoon
- Sugar - 1/4 teaspoon
- Salt - 3/4 teaspoon
Method
Take the idli rava, salt, sugar and coconut in a heavy bottomed pan, add about 3 cups of water and mix it well.
Put this on the stove, and keep stirring it on medium heat, till it becomes thick and cooked, and comes together as a thick dough. Remove and leave it covered, till it cools down a bit and you can handle it. Grease your hands with a lot oil, make small lime sized balls, steam them for 20 minutes, remove and serve them warm.
Note
Idli Rava is available in Indian Groceries, it's a coarse rice powder, don't use fine rice flour.
If you can't make kadala curry, I think this would also go with any coconut based kuzhambu/ curry or even with coconut chutney.
These rice balls look so adorable...and I love the pairing with coconut.
