Shaam Savera, Spinach Paneer Kofta Curry

When I was checking on the web for some spinach paneer kofta recipe, I came across this dish Shaam Savera by chef Sanjeev Kapoor. I have never heard of this dish before, or might have seen on some menu card and totally forgot about it. More than the actual recipe, the pictures of this dish on the web actually made it look very tempting and I wanted to give it a try. When I saw that, the dish is basically spinach koftas stuffed with paneer and served with a rich tomato gravy, I knew immediately, that nothing can go wrong in this combination. It's not an everyday kind of dish, needs some time, so make and enjoy it with rotis, naans or pilafs, for a relaxed brunch or a special dinner..

Kerala Style Tomato Rasam

When I was looking at Sadya menus, a Rasam is also a part of it. Just like the sambar which is prepared in the Kerala style, the rasam is also different from the Tamil style. So I checked some recipes and finally settled down on this, since it didn't require any rasam powder. Tomatoes are the main ingredient for this rasam and we add both ginger and garlic to it, the rasam tasted very good and had a different flavor, do try it when you want a change from your regular style of rasam..

Cheddar Cheese Sandwiches

As I had mentioned in my earlier post, I had bought this very good quality cheddar cheese from the mall here. I had used it in a few dishes, these sandwiches being one of them. This is a very simple recipe, I have used just some spring onions and tomatoes along with the cheese. The sandwiches tasted too good, they are very filling too and we loved the cheddar cheese, tomato and spring onion combo..

Tomato Rice With Coconut Milk, Thengai Paal Thakkali Sadam

Thakkali Sadam, this is the favorite mixed rice in our home, I have already posted one version of it ( the one that I make more often ) here in the blog, I don't use any masalas, garlic or coconut milk in that rice, just plain seasoning and green chillies for spice. Today's rice is another version of Tomato Rice, we cook the rice with tomatoes, coconut milk and it has garlic, it's more like a pilaf. This rice tastes totally different from the first one and the flavors are totally different with the coconut milk and garlic. Both are tasty in their own way, you might like one better than the other, depending upon your choice of flavors..

Pasta with Kumato Tomatoes

Ever since I read about these tomatoes in Priya's Now Serving, I had wanted to try them. Couple of weeks back when I saw them, I picked a whole pack of them. These tomatoes are a reddish brown in color and have a unique taste, not too sour and not too sweet. Well, I was thinking of ways to use it, of course not in the regular Indian way but where you can taste the tomatoes in the dish. I couldn't come up with anything, except for eating it raw, so I finally decided to use it in a pasta dish. It turned out to be really.. good, I had also added some roasted eggplants and asparagus to it. If you find these tomatoes at your grocer's, do give it a try, you will love it..

Cracked Wheat Tomato Bhath

At home, everyone likes tomato rice or tomato bhath or briyani. As usual I always try to replace rice wherever possible with cracked wheat or quinoa, at the same time not compromising much on the taste. The tomato bhath with cracked wheat turned out to be a healthy one pot meal and tasted very good. I added some baby lima beans for protein and served it with a raitha..

Tomato And Onion Pinwheels

Couple of weeks back, I had invited some friends for dinner, after deciding on the main dishes and dessert, I came to the appetizer part. I wanted to keep it pretty simple, and didn't want to do any deep frying. After going back and forth many times, I finally settled on this and had no regrets. I chose a simple and spicy filling and used store-bought puff pastry sheets. It saved me a lot of time, and it was a liked by everyone..
