Spinach Soup, Keerai (Palak) Soup


          Today's post is going to be a simple and healthy soup with spinach. I had made pizza for lunch and since we can add only so much vegetables to it, I wanted to make a salad or soup on the side to compensate for that. I had got fresh organic spinach that day, so decided to make the soup with it. As always, when I am cooking spinach, I like to keep the flavors simple without too many spices and masalas, so this soup also has just some grated garlic and pepper for flavor and some Parmesan cheese for a little taste and richness..

Eggless Cheddar Cheese Scones

 
          Another dish that I had made with Cheddar Cheese is these delicious Savory Scones. Scones have neither a soft or a hard texture, they are somewhere in the middle and they are great for breakfast or as a teatime snack. I have already posted a couple of scones on my blog and they are all sweet ones, this is my first savory one. When I say that the whole house smelled divine, while the scones were in the oven, I am not exaggerating, in fact they smelt so good even when I was mixing and rolling out the dough. Mac & Cheese With Vegetables


          Mac & Cheese, this used to be my daughter's favorite snack when we were back in the US, but I used to make it from the Mac & Cheese sachets that we get back there. After coming to India, whenever I brought cheese, it was mozzarella but when I bought this good quality Cheddar Cheese, I wanted to make it. I like the combination of red pepper/capsicum with cheddar cheese, so I just added some sauteed capsicum and green peas towards the end and it tasted absolutely delicious..

Cheddar Cheese Sandwiches


          As I had mentioned in my earlier post, I had bought this very good quality cheddar cheese from the mall here. I had used it in a few dishes, these sandwiches being one of them. This is a very simple recipe, I have used just some spring onions and tomatoes along with the cheese. The sandwiches tasted too good, they are very filling too and we loved the cheddar cheese, tomato and spring onion combo..

Cheddar Cheese Pancakes


          Being in Bangalore has many advantages, at least in the food blogger's point of view, because of the big expat crowd here, it's easy to find and buy cooking ingredients used in other cuisines. On one of my visits to a mall here, I bought this very good quality Cheddar Cheese. Usually I don't buy Cheddar cheese, that day after tasting a bit of the cheese, I ended up buying, not 1 pack but 2 packs of it, it was so good. I have used the cheese in a couple of dishes, one of them being these Cheddar Cheese Pancakes. I had added some scallions for flavor, and the pancakes came out so good and they tasted very good along with some spicy tomato sauce..
