Here in Bangalore, the summer is really hot this year, of course, this is only my third year here, but the last two years has not been this bad. The afternoons are becoming more and more unbearable, hope it'll become better in a couple of weeks. Coming to today's dish, refreshing and delicious Watermelon Granita, what better time to try it than now, when the temperature is soaring and watermelons are found allover the place. Of course, we love to have the fruit as such, or sometimes make a juice with it, this is the first time I tried out Granita at home. I can't say how good it tasted, so so good, we just loved it and I am planning to try out Granita with other fruits..
Need To Have
- Watermelon - 4 cups, diced
- Lemon Juice - 1 tablespoon
- Ginger - 1" piece
- Sugar - 4 tablespoons
- Mint leaves for garnishing
Method
Grind 1 cup of the watermelon with the ginger, strain and keep.
Blend the remaining watermelon pieces along with the sugar, remove ( no need to strain this ) and add it to the strained watermelon ginger juice. Totally, I got about 3 cups of watermelon juice. Mix the lemon juice and keep.
Now pour it in a freezer-safe dish ( preferably flat one ) and freeze it. Depending on the chillness in your refrigerator, check after 45 minutes to an hour, you can see the juice is getting solidified. Scrap the sides with a fork, just break the soft ice, put it back in the freezer.
Keep doing this at least 3 or 4 times ( 45 minutes to 1 hour intervals ), the leave it overnight or at least for 5 to 6 hours. Now remove it, scrap it one more time with the fork, your granita is ready. Garnish with mint leaves and serve.
Note
I have strained the first juice with watermelon and ginger, since ginger will not be blended properly, but you need not strain the remaining juice.
If the watermelon is very sweet, you can leave out the sugar, but keep in mind, the juice might be sweet enough, but when we freeze it, the sweetness goes down, but it's a personal preference.
The consistency of the granita is very light.
