I had bookmarked this cake, longtime back from Tickling Palates, but could not make till now. I loved everything about this cake, it didn't have any butter, eggs, very healthy and the then the rich golden color. But more than that, the method used for making this cake was even more interesting, we have to make a date mixture, cook it on stove top, cool and then mix in the flours. The cake turned out very good, moist, had a beautiful texture, delicious flavor and the taste was awesome, this is one cake that I would be making again and again..
Need To Have
- All Purpose Flour - 1/2 cup
- Whole Wheat Flour - 1/2 cup
- Granulated Sugar - 1/2 cup
- Chopped Dates - 1/2 cup
- Baking Soda - 1 teaspoon
- Cinnamon Powder - 1/2 teaspoon
- Salt - 1/8 teaspoon
- Oil - 1/4 cup
- Water - 1 cup
Method
Take the sugar, cinnamon, dates, add the oil, salt and water, mix and put it on a stove.
When it starts boiling, reduce the heat and keep simmering for about 20 minutes ( keep stirring in between ). Let it cool completely.
Sieve together the flours and baking powder and mix it into the cooled date mixture.
Pour in a greased loaf pan, bake it at 180 C for 40 minutes, cool, slice and serve.
Note
I made the date mixture, around 9 or 10 in the night and left it out overnight, mixed in the flours and baked in the morning, make sure that the mixture is cooled down completely before adding the flour.
