Last time when I bought some beets, I wanted to try something other than the regular poriyal and kootu. I like podi curries, the ones we do with eggplants and potatoes, they are very flavorful as we add fresh spice powder, so I decided to do a podi curry with beets also. I used a little peanuts with coriander seeds and dried red chillies, the curry had a nice crunch and went well with both rice and rotis..
Need To Have
- Chopped Beets - 1 + 1/2 cup ( 3 small beets )
- Mustard Seeds - 1/2 teaspoon
- Turmeric Powder - 1/4 teaspoon
- Asafoetida Powder - 1/8 teaspoon
- Salt to taste
To Powder
- Raw Peanuts - 2 tablespoons
- Dried Red Chillies - 2
- Coriander Seeds - 1 tablespoons
Method
Dry roast the peanuts, and saute the coriander seeds and red chillies in a little oil, cool everything, coarsely powder and keep.
Heat some oil, add the mustard seeds, once it starts spluttering, add the asafoetida, followed by the beets and the turmeric powder. Add some salt and about 1/4 cup water, cover and cook till the beets is done. Remove the lid, if there is moisture, cook till it's dry.
Add the powder, mix everything together for 2 minutes, remove and serve.
Note
You can add a few curry leaves at the end, after adding the powder, if the curry looks too dry, add a little oil and mix.
Can also 1 or 2 tablespoons of coconut, either to powder along with peanuts and coriander seeds or at the end, just before switching off.
