Pumpkin Curry, Parangikkai Curry


          Today, it's going to be another simple and healthy dish with pumpkin/parangikkai. The pumpkin pieces are cooked and flavored with a fresh spice powder and the dish has a sweet, tangy and spicy taste from the tamarind and jaggery added. It's a semi-dry curry and tastes great when mixed with rice but would also pair well with some rotis too..

Mathanga Erissery, Kerala Style Pumpkin Curry


            Today's post is going to be Mathanga Erissery/Pumpkin Curry, another dish that's served in the Onam Sadya. This is a very flavorful dish with a double dosage of coconut, it's added as a paste to the cooked vegetable and then again some sauteed coconut is mixed at the end and of course, coconut oil is used for cooking. I followed the recipe from ' The Essential Kerala Cookbook', it's again an easy dish and since pumpkin cooks fast, it's done in no time. The curry tastes really delicious and goes very well with rice, try it out if you like coconut..

Pumpkin Pachadi


          I was putting together lunch on a weekend, I had only a few veggies in hand and I didn't want to get new ones before getting done with them, I had  made a sambar and a fry and I had some chopped pumpkin in my freezer which I wanted to finish up. Usually I make a sambar or a curry with it, which I didn't want to do that day, so I made this pachadi for the first time. It turned out to be very good, served it as a side dish, but even tasted great when mixed with some rice..
