Vendakkai Dosai, Bhindi Dosa, Okra Dosa


          It's been more than a month, something or the other kept me away from the blog and now I think, I have lost the habit of blogging. I haven't cooked anything special for the blog in the last 2 months, even today's post is something that I had made sometime back, well slowly I have to get back to the blogging routine. Today's dish is another simple and delicious dosa, Vendakkai Dosai or Bhindi or Okra Dosa. I came across this recipe in a cook book by Mrs Chandra Padmanabhan, and I was surprised at the thought that one can make dosas with lady's finger/okra. The batter needs to be fermented and the resulting dosas are soft and fluffy and nobody would be able to notice the okra in it, until you actually tell them, and they go well with a spicy chutney and sambar..

Okra And Baby Corn Curry


         Sometimes, cooking with the same vegetables repeatedly is a little boring, mixing it with another vegetable or dal gives it a different shade. Adding baby corn to the okra, gave a nice crunch to the otherwise slimy texture of okra. Adding lots of onion and tomatoes gave a nice taste to it..

Okra Fried Rice

     
          Everybody loves okra (lady'sfinger or vendikkai) at home, at least in mine, add it to a sambar or make a curry, I have no complaints. But,I never thought that I could make a rice with it, okra being the slimy one. I had jotted down this recipe very long time back and totally forgot about it. When I pulled it out today, I noted that I didn't have a couple of ingredients needed for the dish, but that didn't hold me back. My mind was made up to make it, one way or the other, and so finally I ended up making my own version, it's a very simple and easy one, all those okra lovers out there should definitely give this a try..
