Instant Oats Uthappam, Savory Pancakes


          Today, I had to make lunch just for me, of course, my daughter would have some too, after she came from school. I wanted to make something that was simple and at the same time a little healthy too and after thinking about so many things, I finally made this Oats Uthappam. Though the name has only oats in it, I have added so many other ingredients to it, starting with poha/rice flakes, rice flour, carrots, paneer and other spices. I just made a batter with all of them and made the uthappam, they turned out perfect and they would taste good with any kind of chutney/thokku or gravy..

Oats Idlis, Instant Oats Idli Recipe


          Idlis with chutney or sambar is a favorite at home, no complaints from the husband and daughter and for me, I need not spend time standing, making rotis and dosas. Instant idlis get another big tick from me, no need to grind the batter and then wait for it to ferment. Instant Oats Idlis is another very easy recipe, I follow the same procedure like the Rava Idlis, except here, I use a mixture of oats and rava ( semolina ) for making the idlis. Though I can have oats every single day for breakfast, my family runs away from it, so I have to sneak it in only in the form of upmas, idlis and dosas. The idlis came out very good, nobody can tell that there is oats in it unless you tell them. Serve it with the chutney of your choice, we had it with carrot chutney and it was absolutely delicious..

Oatmeal Banana Muffins


           For a long time time now, I had been thinking of baking something with oatmeal, and also had a couple of bananas begging to be used and some not so sweet strawberries, so I put everything together and made these muffins with whole wheat flour and oatmeal. Thinking of muffins, I always wonder, what is the big difference between cupcakes and muffins, apart from the icing part, both are made in the same pan and almost made from the same ingredients, to me a lighter and sweeter muffin is almost like a cupcake. Well, coming back to these oatmeal muffins, they turned out to be very moist and not too sweet, a good breakfast or even a teatime snack..
