Achari Gobi, Cauliflower With Pickling Spices ( Lucknowi Style )


            I have been seeing these Achari dishes for a long time, but I finally tried this Achari Gobi only now. I wanted to try something new with cauliflower and decided to do this Achari Gobi, after going through so many variations of this dish, I decided to do this Lucknowi Achari Gobi. Basically 'achar' means pickle and Achari Gobi is actually cauliflower ( gobi ) cooked in pickling spices. The pickling spices used here is a mixture of mustard, fennel, fenugreek, cumin and nigella seeds ( also known as kalonji, onion seeds ). The dish is originally cooked in mustard oil, but as usual I have used a mixture of regular oil and mustard oil, Achari Gobi turned out really good and tasted delicious with rotis..

Cauliflower With Fenugreek Leaves, Methi Gobi


          I get organic greens 3 days a week, and it's methi/fenugreek leaves one day, so every week I have to cook something with it, sometimes I make sambar, kootu or parathas and then I try to make curries with it along with other vegetables. As much as I like Aloo Methi, now I have started making this Methi Gobi and I like it even better, and we get a good serving of vegetables. It's a simple curry, cleaning the fresh fenugreek leaves and preparing the cauliflower takes the most time, otherwise the curry gets done fast. This goes well with phulkas and rotis or even as a side with some rice and dal/sambar..

Cauliflower Posto, Cauliflower In Poppy Seed-Mustard Gravy


          Both the daughter and I like Bengali food, we love their dum aloo, kachoris and their vegetable curries in mustard gravies. Previously I used to use regular vegetable or sunflower oil instead of mustard oil, but recently I had bought a bottle of mustard oil and I am using it to make these Bengali style curries. Now, not everybody would love mustard oil, even my husband is not a big fan of it, sometimes I mix regular oil and mustard oil, so as to keep down the flavor a little. Now, coming to today's curry, we cook the cauliflower in a mustard-poppy seeds and cashew paste and milk. The curry tastes delicious with both rice and rotis, do give it a shot if you want to try out some Bengali food at home..

Cauliflower Lima Beans Fry


          Cauliflower is one vegetable I like to always have in the fridge, you can come up with so many curries with it, from simple stir fries, to kurmas and appetizers like pakoras or the most loved manchurian. I simply love this vegetable, my daughter would not agree with me on this, except might be when she gets her pakoras. Today's recipe is a simple fry, I also added some lima beans, which is also something that I always have in the freezer. It blends very well with the cauliflower and also makes the dish more wholesome..

Cauliflower And Potato Curry


          Cauliflower and potato curry or most commonly known as aloo gobi,  is a very popular and common dish, found in most of the restaurant menu cards. It can be made in a number of different ways from a simple fry to a nice rich gravy or a kurma, just by changing the spices added, you can end up in many varieties. Cauliflower And Capsicum Khichidi


          When it is cold outside, what is more inviting than a bowl of warm khichidi with some pickle on the side, very comforting indeed. I first tasted this at a Punjabi friend's place with some sliced onions on top, loved it. Usually it is made with rice and moong dal, slightly different from our pongal, but nowadays, I try to replace rice with something more healthy, so made it with cracked wheat. To make it a complete meal, I added some sauteed cauliflower and capsicum, try it, you'll like it, especially when you have the wonderful feeling that you have fed the family something healthy..

Cauliflower And Methi Paratha

 
          I try to make parathas at least once in two weeks, an ideal weekend lunch or brunch. As the parathas  have some kind of vegetable stuffed with, I usually serve it with some pickle, curd and a salad on the side. I've never tried anything other than aloo parthas or radish parathas, this is my first attempt to make these cauliflower parathas, the thought of grating the cauliflower so finely had put me off, but my new food processor made the job easier. I added methi for the extra flavor, and for a first try they turned out to be too good..

Cauliflower And Peas In Mustard Gravy

 
          I have tasted vegetable curries cooked with mustard paste at a Bengali friend's place, liked the taste, it was different from the regular kurmas and gravies, the taste of mustard is very unique. I have added tomatoes in this gravy to suit my taste, almonds and poppy seeds to make the gravy thick, try this out..
