I get three types of organic greens, spinach, methi and amaranth every week and sometimes the methi leaves bunch turns out to be a really big one. After making the usual stuff with them, I had some more and I was looking out for something new to try with it. I looked up for some chutney recipes with fenugreek leaves and finally decided to make this one with methi/vendiya keerai and carrots. This chutney has a coarse texture and tastes best when mixed with some rice and ghee. This is the first time I made this and we loved it, it goes well with some curd rice too..

Carrot Dosa
As I have already told many times, we never get tired of dosas at home, so here is another new dosa for my dosa collection, Carrot Dosa. Actually this is a recipe from Mallika Badrinath's cook book. It's an instant dosa, in the sense, the batter need not be fermented, but of course we have to soak and grind the rice along with the carrots and other spices. As with most instant dosas, it tastes best when served hot, it tends to become rubbery when it gets cold and it goes well with some coconut or peanut based chutney..

Methi And Carrot Parathas (Flat Bread)
Parathas are flat breads with some kind of filling inside, it can be a dal (lentil) or a vegetable filling or a mixture of both. When served with some relish or curry on the side, it sums up to a nice wholesome meal.
For today's parathas I chose fresh fenugreek leaves (methi) and carrots, the slight bitterness of the methi is offset by the sweetness in the carrots. These parathas were extremely soft and delicious with the nice aroma from the ajwain seeds (bishop's weed) in the filling..

Carrot Cake With Cream Cheese Icing
Before coming out of India, there were only two cakes in my world, a vanilla or a chocolate cake, never even imagined that you could add vegetables to cakes. When I tasted this cake the first time, I fell in love with the nutmeg flavor in it, again a first for me. My husband's colleague had made it and she was kind enough to give me the recipe, she had used apples along with carrots in the cake. I made it only with carrots and did a cream cheese icing. This is one cake for which I definitely recommend an icing, it compliments the cake so well. I did an eggless version, using flaxseeds instead, the end result was awesome..

Chocolate And Carrot Cupcakes
I am a novice when it comes to baking, have not yet tried my hand in anything fancy yet. The most I have done, is some brownies, muffins and some simple cakes. These cupcakes are again very easy and a no-fail recipe, if I can do it, then anyone can do it. My daughter loves anything with chocolate, a dark chocolate lover, so I made it a chocolate cupcake and I added some grated carrots, just like that. It turned out very spongy and yummy..
