Maida Burfi, Sweet With All Purpose Flour


          After a savory recipe, here comes another easy and delicious sweet that we can make for this Diwali, Maida Burfi, a simple sweet made with maida/all purpose flour. It just requires a few basic ingredients, it's such an easy dish and it comes out perfect if you are careful about a few things. I have adapted this recipe again from a cookbook and have made a few changes according to our taste, try out this easy sweet for this Diwali..

Need To Have

  • Maida/All Purpose Flour - 1/4 cup
  • Sugar - 5 tablespoons + 1 teaspoon
  • Ghee - 1 tablespoon + 1 teaspoon
  • Orange Food Color, as required
  • Vanilla Extract - 2 to 3 drops

Method


          Heat the ghee, add the maida, mix and toast on low-medium heat for 5 to 6 minutes, it will become crumbly and would have a nice flavor, remove and keep. Keep ready a tray greased with ghee.


          Take the sugar along with 3 tablespoons of water, heat, mix till the sugar dissolves and keep heating till you get a single thread consistency. When you take a drop between your thumb and fore finger, it should form a single string.


          Now switch off the stove, add the food color and the vanilla extract and mix well. Then add the roasted flour to it. Mix it vigorously, it'll be loose in the beginning, but very soon it'll thick.


          When it all comes together and not fully solidified, transfer to the greased tray, flatten it fast and smooth the top with a parchment paper. Leave it for a minute, then slice it and leave it to cool, when it has cooled down completely, remove the slices.


Note
Pour the mixture to the tray, when it's still spreadable.
When the ghee is hot, add the flour, but immediately reduce the heat and roast, the flour should not change color or get burnt.
When you eat this burfi, it should melt in the mouth, that's the right consistency.
This should stay good for at least a week.
