Cucumber Dosa, Vellarikkai Dosai, Southekayi Dose


          After making cucumber idlis, the next in line was dosas using cucumber/vellarikkai/southekayi. I had tasted cucumber dosas long time back and in fact I had tried making it at home but they didn't turn out that good. Then this summer again, when browsing for some other recipe, I came across them here, and so I tried it out one more time and this time the dosas came out really good. I made the dosas using the ' appam pan ' ( you can use any shallow non-stick pan ) and they came out paper thin and so soft, like thin crepes. Serve the Cucumber Dosas warm, with any coconut based chutney or peanut chutney, I served them with Coriander Peanut Chutney ( will post recipe soon ) and they tasted too good..

Need To Have

  • Idli Rice - 1 cup
  • Grated Cucumber - 1 cup
  • Cumin Seeds/Jeera - 1/2 teaspoon
  • Green Chillies - 2
  • Chopped Coriander - 1/4 cup
  • Grated Coconut - 2 tablespoons
  • Salt - 1 teaspoon

Method


          Wash and soak the rice for 3 to 4 hours. Peel the cucumber and grate it, take 1 cup of it. Drain the soaked rice, grind it along with grated cucumber, cumin seeds, green chillies, coriander leaves and grated coconut into a fine batter.


          Remove the batter from the blender, add the salt and about 11/2 to 13/4 cup of water to make a runny batter. The batter should be so thin, that after pouring it in the pan, you should be able to spread it thinly by just swirling the pan. Now heat a appam pan or any shallow pan, pour 1/4 teaspoon of oil, wipe the pan with a tissue ( keep this tissue and use it to wipe the pan each time, before pouring the batter ). Pour a laddle of batter, swirl the pan to spread it, cover and cook it on medium-low heat, until you see light brown spots or the dosa starts lifting at the edges. Lift it around the edges and remove the dosa from the pan, fold and keep it. Make dosas the same way with the remaining batter.

Note
Use the fat, fleshy cucumber which has more juice, not the thin English cucumbers.
The dosas are thin and soft, they can be folded like a handkerchief.
The above quantity should be enough for 3 people.
You can prepare the dosas like rava dosa too.
