Eggless Banana Muffins


          This month, for eggless baking, Gayathri had chosen Banana Muffins. Though banana muffins are fairly easy to bake, sometimes it is difficult to get the right texture when doing an eggless version. Usually I use flax seeds powder instead of eggs, since I wanted to use a different alternative, this time I used fat free evaporated milk. Also I replaced half of the all purpose flour with whole wheat flour and used cardamom for flavoring, the end result was very satisfying..

Need To Have

  • All Purpose Flour - 1/2 cup
  • Whole Wheat Flour - 1/2 cup
  • Ripe Bananas - 2
  • Fat Free Evaporated Milk - 1/2 cup + 2 tablespoons
  • Brown Sugar - 1/2 cup
  • Oil - 1/4 cup
  • Cardamom Powder - 2 teaspoons
  • Baking Powder - 1 teaspoon
  • Baking Soda - 1 teaspoon
  • Salt - a small pinch



Method
          Preheat the oven to 350F. Mash the bananas well, can use the blender. Sift together both the flours, baking powder and baking soda. Beat the oil, evaporated milk, sugar, bananas well, add the salt and the cardamom powder. Now, fold in the dry ingredients, pour it into greased muffin pans and bake it for 15 mins. Cool and remove from the pan.

Note
Do not mix too much after adding the dry ingredients.
I usually have whole cardamoms powdered with a little sugar, if you are using fresh cardamom powder, use 1 to 1+1/2 teaspoon of it, since fresh cardamom will be more flavorful.
I used mini muffin pans, and I got 24 muffins, also if you are using the big muffin pans, the baking time will be a little more.

  5. This does have some great texture for an eggless muffin. Clever to use fat free evaporated milk in these as well. I like the bananas and cardamon, very complimentary pairing-yum!

  9. Now look at those muffins, beautiful with fluffy texture and you've done a great job in this challenge. Nice idea to use evaporated milk as an egg substitute. The clicks are very tempting.....love it. I used coconut milk and flax seed ....it was nice doing this challenge.

  15. What are those dark traces in your muffin? Is it the cardamom powder? makes the muffins look extra delectable....one trick I have learnt from my mother is to use yogurt as an egg replacement and the cakes/muffins come out so moist with that I can't tell you, so now a days I prefer using yogurt rather than eggs....

    visiting your blog first time through blog hopping. 'coz of my limited knowledge and experience in baking, i am not able to figure out what is fat free evaporated milk, listed fourth in the ingredient list. can u plz explain?

    1. Hi Valli, we get fat free evaporated milk in cans in the US, basically boiled milk, reduced to half its volume but not available readily in India, you can use condensed milk instead, but then reduce the sugar accordingly as condensed milk has sugar.

      as u rightly said this is not available in india. i guess the quanitity is same(1/2 cup + 2tblsp) for condensed milk too, rt?? of course... i'll reduce the sugar and try.

Hey Valli, condensed milk is a little denser than evaporated milk ( milk reduced to half its volume is not that thick) so I would say mix in a little warm water or regular milk to the condensed milk to bring it to the pouring consistency like thick milk and then proceed with the same measurements, let me know how the muffins turned out.
